AVOCADO DRESSING - 1 Avocado, 2 ounces lemon juice, 1 bulb of garlic, 1 cucumber and a chunk of red onion

ROMESCO SAUCE - 1.5 cups of soaked almonds, 1 red peppers, 2 tbsp. rice vinegar, 1 tsp smoked paprika, 3-4 garlic cloves chopped, 1/2 cup water (to taste)

Minty Pear Dressing - 2 Bosc Pears, 1/2 Cucumber, 1 cup Almonds, 3 Medjool Dates, 1/2 bunch Fresh Mint, 1.5 cups of Water
